Ingredients
400g freshwater prawns
1/2 cup chilli sauce
1/2 cup tomato ketchup
1 medium onion
1 heaped tbs minced garlic
1 red chilli
1 cup cooking oil
2 tbsp fish sauce
1 tbsp chinese wine
1 egg
Method
1. Wash the prawns. Remove pincers and feelers.
2. Cut bigger prawns into halves length-wise. Make a slit in the back of small prawns.
3. Slice onions thinly and cut chilli into strips
4. Heat oil in wok, add prawns and fry until they turn bright red. Remove.
5. Add onions, garlic and chilli to the oil and fry till fragrant.
6. Add chilli sauce, ketchup, fish sauce and wine.
7. When mixture bubbles, stir in the egg.
8. When mixture bubbles again and turns creamy, return prawns to wok and toss till evenly coated with the sauce.
9. Serve immediately.
