Ingredients
300g squid
2 heaped tbs sambal chili
2 tbs oil
1 tbs minced garlic
1 tbs fish sauce
Pepper
Method
1. Clean squid by removing the skin, spine and ink sac from the body, and the eyes and mouth from the head.
2. Cut the head into 4 pieces and the body into 1cm wide rings.
3. Marinate squid with fish sauce and pepper for 10 mins.
4. Heat oil in wok and fry garlic till fragrant then add sambal chilli.
5. Add squid and toss till evenly coated with chilli mixture.
6. Serve immediately.
